- Dried, fried onions
- 3 eggs (you may remove 2 yolks)
- 1 oz of mozzarella cheese
- 1 tea sp. of turmeric
- Pinch of cinnamon, ginger & nutmeg
- 1 tbs of margerine
Preheat pan with melted margerine, then add onions, let soften. Add eggs and once they are somewhat firm, add mozzarella. Add all spices on top, then fold the omelette over so that cheese stays inside.
Enjoy with a sweet cup of coffee; it will help balance and offset the spicy omelette.
