Sweet Nut Chicken- Recipe

Here is a good recipe to spice up your usual diet.

  • 2 lbs of chicken breast (boneless & skinless)
  • Half bunch of cilantro and of basil
  • 2 sweet potatoes
  • 1 apple
  • 3 tbs of cranberry sauce
  • 3-5 tbs of peanut butter
  • 1 tbs of curry and of cinnamon
  • 2 tbs of ginger powder

Slit the individual breast cutlets in the middle, but do not cut them in half. Wash and mix cilantro and basil; cut off the stem below leafy part,
and use the entire stalk, dont shred.

Place in the aluminum pan. Spread
peanut butter on, covering the entire top surface. Follow by cranberry sauce and dust over with curry. Then cut thin slices of peeled apple and of the sweet potato. Dust over with cinnamon and ginger.

Bake for one-and-half hour at 375 degrees.

Suggested side: Asparagus lightly sauteed with garlic and hoisin sauce.
